I searched the whole thing from top to bottom keyboard my iPhone, iOS version after iOS version… without success… and yet the degree symbol is present on the iOS keyboard! But then it is really well hidden!
And yet, the manipulation is very simple. When you want to make an "é" you probably know that it is possible to hold down the "e" to display all the accentuation options?
Well, to type the “°” sign (degree sign) the manipulation is similar, but you have to keep pressing the 0 (zero)… yes, the 0!
This trick also works with the letter "o" key! This makes it possible to quickly type the degree symbol whether you are on the letter keyboard or the numeric keypad!
So, you're going to tell me that the degree sign, a little circle, is a bit like a 0 or an O... but frankly, I think that in this case, Apple hid it well!

Regarding subscripts and superscripts, these are formatting options and not keyboard keys... So, to my knowledge, there is no option to do this on the native iOS keyboard.
Maybe you should look at alternative keyboards for iOS available on the App Store...
I don't know how to do that!
