Rest assured, sending an email at a given time and/or date with Gmail is very, very simple!
When you compose an email on the web version of Gmail, you will notice a small arrow on the right side of the blue “Send” button.
By clicking on it, the option "Schedule sending" will appear. Click on it.
You will then be able to choose the date and time at which you wish to schedule your email.
From then on, you will be able to find all your scheduled emails in a specific Gmail folder that you will discover on the left bar. This will allow you to cancel the scheduling of an email by going to it and clicking on "cancel sending". Your message will then open in composition mode and you will be able to delete or modify it.
